Quick and easy camping lunch recipes you should definitely try

Breakfast is in fact the most important meal of the day. But a good lunch will give you the energy you need in the middle of the day, especially when you’re busy doing all kinds of outdoor activities. When you’re in the woods, you want to spend less time cooking and more time enjoying your food, so opt to make easy meals for lunch.

These quick camping lunch recipes are perfect for the great outdoors!

Quick Spiced Chicken and Veggies

What do you need:

  • 2 large chicken breasts
  • 3 large carrots, cut into thirds
  • 4 red skinned potatoes, cut in half
  • 2 ears of corn, quartered
  • 5 sprigs of fresh thyme
  • 1 tablespoon butter
  • 1 tablespoon olive oil plus more for frying
  • 1 tablespoon of paprika
  • 2 teaspoons of salt
  • 2 teaspoons onion powder
  • 1 teaspoon rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

At home, prepare vegetables and place them in Ziploc bags. In a small bowl, combine the paprika, salt, onion powder, rosemary, garlic powder, black pepper, and oregano and place in a Ziploc bag until ready to use. At camp, reserve 1 tablespoon of the spice mix. Place the rest in a large resealable bag along with the chicken. Let marinate for 1 hour.

Place the veggies in a bowl, drizzle with olive oil, and sprinkle with the reserved spice mix. Mix until vegetables are well coated. Heat the oil in a skillet and cook the marinated chicken over medium high heat until golden brown. Transfer to sturdy aluminum foil then add the veggies. Top with butter and thyme and close the foil to make a package. Cook over a hot fire pit until chicken is cooked through.

Turkey Meatloaf Foil Package

What do you need:

  • 1/2 kg. ground turkey
  • 1 large egg
  • 1/3 cup quick-cooking oatmeal
  • 1/4 cup onion, minced
  • 6 tablespoons barbecue sauce, divided, plus more for serving
  • 1 teaspoon dried marjoram
  • 3/4 teaspoon kosher salt

Making meatloaf at home is recommended, so all you have to do at camp is heat it up over the campfire! Combine ground turkey, egg, oatmeal, 3 tablespoons barbecue sauce, marjoram, and salt in a bowl. Mix well and divide into 4 servings (4 x 2.5 inches).

At camp, arrange the meatloaf slices on separate sheets. Brush with barbecue sauce and cook over camp fire for 20-25 minutes or until cooked through. Serve with more barbecue sauce. It is recommended to serve with vegetables.
